Last month I had an email come to my inbox. I was suspicious about it at first, as it referenced content that I had written. Someone is emailing me about a blog post that I wrote? Surely not. But it was legit!
Positive Health Wellness contacted me, suggesting a post of theirs that may benefit people who find my Great Freezer Meal Adventure post.
Well let’s be honest for a moment and say that I could go for any quick and easy recipe right now. The fact that this post happens to be about salmon is a bonus. My soon-to-be-9-month-old is quite the fan of salmon, and my husband and I try to include fish in our diet at least once a week.

I’m in the market for more quick and easy recipes – especially recipes on a budget! Slow-Cooker recipes? Throw them at me! I haven’t used my Slow-Cooker nearly as much as I thought I would with a kid running around, and I need to change that. She’s mobile, taking steps, and climbing stairs. By the time dinner rolls around, this mom wants nothing to do with the kitchen.

I’ve never made pork chops in the crockpot. Let me tell you, they were delicious! The Slow Cooker Ranch Pork Chops were ridiculously easy to throw together. Just three ingredients, this is a recipe I would double or even triple! Because the pork chops become fork tender while cooking in the crockpot, I would consider trimming them ahead of time – but that’s because I’m ridiculously picky when it comes to fat and gristle on my meat.
We paired this simple meal with some frozen broccoli that steams right in the bag, in the microwave. Easy, easy, easy!
My apologies for falling behind on my meal reviews. Things on this end have been a bit busy since the arrival of Lillie Mae three weeks ago! My husband and I have sampled a few of the freezer meals since Lillie’s arrival, so here we go catching up on reviews.
Let’s talk Chicken, Broccoli, Bacon & Potato Bake.
This is a well-rounded recipe, easy to bake off, and delicious! I’d consider adding more bacon, but what recipe isn’t made even better with more bacon?
We’ve also sampled the Cilantro Lime Chicken recipe.
This recipe smells amazing as it cooks! We made quite a few meals out of this. I enjoyed it with some added sour cream and shredded cheese. It reminded me of a chicken dip that would have been fabulous with tortilla chips! I didn’t pick up a lot of lime flavor, but everything was well balanced. This would be a great potluck recipe to share with a group.
Honey Garlic Chicken & Veggies was another recipe we tried.
This recipe was tasty. The veggies were slightly overpowered by the sauce that everything cooked in, but still tasted good.
Now let’s look at Easy Crockpot Mongolian Beef.
Definitely serve this recipe with rice! The green onion garnish adds a nice flavor. The first night we had this recipe as it called for, the beef, green onion, and rice. When I made it leftover for lunch I added some salad greens that my mother in law had brought over. It was a pre-bagged salad, but it had cabbage and roasted quinoa and had come with a sesame dressing, so it had a bit of an oriental flare to it. The added greens and shredded carrot added a lot to the dish! I would definitely recommend adding some veggies to this meal! Broccoli, carrots, shredded cabbage, or any veggie that might go into a stir-fry I think would be a great addition!
And lastly, Maple Dijon Pulled Chicken.
This is what we had for dinner tonight. This meal tastes delicious by itself, but would be even better served on rolls (perhaps Hawaiian Rolls, yum!) and garnished up a bit! I’d add some cheese, perhaps lettuce, caramelized onions, and some additional dijon or honey mustard. It could even be delicious with some grilled pineapple. This yields a nice amount of chicken and could make for another great potluck contribution.
Yesterday’s dinner was Chicken Parmesan Casserole from my Great Freezer Meal Adventure. This was a recipe I had made before, but the second time around I made some modifications.
The main modification involved adding frozen spinach when I put the meal together. I highly recommend this easy addition to the recipe!
I also cut back the amount of sauce, which I also felt helped in the end. The first time I made this dish it seemed as if it was swimming in sauce. This time the ratio was much improved.
As I mentioned in the Great Freezer Meal Adventure post, I did transfer the frozen meal to a larger casserole dish before heating.
My husband and I got about 6 servings out of the freezer meal, last night’s dinner and four lunch containers, and enjoyed Sister Schubert’s Dinner Yeast Rolls alongside.
Today I cooked up Lemon Pepper Chicken & Rice. This recipe was not one that I made during my Great Freezer Meal Adventure, but I did reference it in that post. I thought it would be fun to review the recipe.
The recipe was not the easiest to throw together. It calls for chicken, skin-on. There’s problem #1, because to buy skin-on chicken, you’re likely also buying bone-in chicken. I wasn’t comfortable with the idea of slow-cooking bone-in chicken, because I wasn’t sure what that might do to the bones. I did not want to risk the chicken shredding and taking small bone fragments with it. That would not taste good.
Chicken skin is nice when it is baked and crispy. It’s not such good eats out of the crockpot.
I used carrots instead of green beans, because that’s what I had in the fridge. The flavor is a bit like roasted carrots. It’s not bad, but I’m undecided about how the flavor from the carrots blends with the flavor of the lemon.
The rice turned to mush. It’s palatable, but only just. Honestly, this turned me off of this dish more than anything.
Then there’s the lemon slices, which softened and were difficult to remove from the crockpot without incorporating into the entire dish.
I think I’ll stick to lemon pepper chicken roasted in the oven, and rice made fresh, not slow-cooked for six hours.
This recipe, unfortunately, will not be staying in my recipe binder.
